For some years we have had the idea of bottling one of the several very old vinegar casks that the house Páez Morilla cellars as treasures, but until recently we had doubts whether there would be enough interest in a product like this: very old, very intense and concentrated and at a respectable price, although cheap if its age and quality are taken into account.

La Bota de Vinagre de Jerez Gran Reserva 106 “Bota NO” is made with wine that was already almost 15 years old initially, an age to which another forty years must be added, along which which the alcohol has become acetic acid. gradually. Its acetic grade is above 11, which is outrageous, and it maintains almost 3.5% alcohol. On the other hand, it will be unrepeatable in strict terms, from a single boot that has been emptied and then continues to be used in the aging of vinegars of great age and quality.

Vinegars like this are often used to give character to younger vinegars, however this one has been bottled as is, without any dilution. Very dry, of course, as is the essence of true Sherry vinegar. It is a spectacular vinegar, ideal for perfuming dishes with just a few drops. Normally, a minimal amount will suffice (even with a dropper) as a dressing, and it is even advisable not to add it directly, but to prepare a vinaigrette mixing it with oil, salt and whatever is appropriate. Another interesting option can be to prepare a mixture of sherry in a small bottle (it can be very old, but also a young amontillado, or even a fine one) and this vinegar; for example, 1/3 of the first and 2/3 of the second. The outcome is impressive.
